Sampling Sunday

The husband didn’t feel like P90X today, so I decided to run instead.  I managed 3.5 miles at a slow pace; not bad for post-alcohol.  Post-run I made lunch:

Cereal (what else?) – 1 cup Kashi Go Lean, 1/2 cup Trader Joe’s O’s, 1 cup 1% kefir, and 1/2 oz almonds…

….and some fresh pineapple.  I planned on this being my entire lunch, but I was still hungry 30 minutes later.

I decided a Banana Smoothie would hit the spot.  It contained 1 scoop Unjury unflavored protein powder, 4 oz unsweetened Almond Breeze, frozen medium banana, and 1/2 packet of PureVia (leftover free samples).  It tasted like ice cream with the added stevia! :)

Obviously (if  you read my earlier post), my afternoon was spent baking zucchini bread/muffins.  I had 1/2 of the following muffin and might have licked a spoonful of batter.

I also made some dark chocolate chip oatmeal cookies for Wednesday’s bible study group.

I let these cook for too long, so the bottoms burnt…boo.  I couldn’t resist trying one, so I took this one with the ooey-gooey Ghirardelli:

The cookies used the last of my oats, so I made a trip to Healthy Home Market for some bulk bin goodies – wheatberries, oat bran, rolled oats, and cashews.  I wanted to try my hand at some homemade cashew butter:

I thought my poor processor was going to overheat, but it’s still alive.  I sampled a Tbsp to make sure it was edible – and oooh buddy, it’s edible alright!  Can’t wait to use this stuff over the next week!  After all my “samplings” this afternoon, I decided my 30 minute run wasn’t going to cut it.  I hopped on the elliptical for 45 minutes and then showered.  By 7, I still wasn’t hungry but didn’t want delay dinner much longer.  I settled on another banana smoothie (unpictured, since it’s the exact same as earlier) and a plate of leftover grilled tinfoil veggies with Parmesan cheese:

Blueberry Zucchini Bread/Muffins

As requested, here is the recipe for my mom’s blueberry zucchini bread.  After looking at the ingredients, I knew this one was going to pack a calorie punch because of all the sugar – around 260 calories and 32 grams of sugar per slice using the recipe calculator on www.sparkrecipes.com!  I decided I would prepare the original for my bible study group on Wednesday and try my hand at a lower calorie version just for fun.

Mom’s Blueberry Zucchini Bread (the original recipe)

    Ingredients:
    2 cups all purpose flour
    1 cup whole wheat flour
    1 tsp salt
    1 tsp baking powder
    1 tsp baking soda
    1.5 tsp cinnamon
    1/4 tsp nutmeg
    2 cups grated zucchini
    2 eggs
    1 cup nonfat plain yogurt
    1 3/4 cup sugar
    1.5 tsp vanilla extract
    1 cup frozen blueberries

Preheat oven to 325 degrees. Grease 9×5 pan and dust with flour.  Grate zucchini (I used a food processor):

Combine flour, salt, baking powder, baking soda, and spices in one bowl; combine zucchini, eggs, yogurt, vanilla, and sugar in another. Toss blueberries with 2 tsp flour. Add flour to zucchini mixture, stirring until just combined.  Fold in blueberries.

Bake 60-90 minutes or until loaf is golden brown and toothpick inserted into center is clean. Cool for 20 minutes before slicing.

Nutrition Stats: ~260 calories, 1 g fat, 57 g carbohydrate, 32 g sugar, 3 g fiber, 6 g protein

Lightened Up Blueberry Zucchini Muffins

Same directions as the original, except I decreased the sugar to 1 cup and replaced the 2 whole eggs with 4 egg whites.   I also used a muffin tin since the loaf pan was in use and muffins = automatic portion control.  These cooked in about 45 minutes instead of 1 hour.

Nutrition Stats (per muffin): ~200 calories, 44 g carbohydrate, 20 g sugar, 3 g fiber, 7 g protein

I could tell these weren’t as sweet, but they were still really good!  I froze them after they cooled so I don’t feel obligated to eat them all within a week.


July 4th Grill Fest

The husband and I had a low-key July 4th.  We did some gardening, worked out, ran some errands, grilled out, and then watched a movie.  Nothing fancy, but I must say it’s nice to wake up hungover from copious amount of alcohol.  Here was the day in food:

Mexican Egg White Veggie Scramble

(2 HUGE servings)

- medium squash

- medium zucchini

- medium onion

- 1/2 cup salsa

- 1/2 cup 2% cheese

- spices: cumin, chili powder, garlic powder, paprika

I sauteed the veggies & spices first (a dash of each) on medium heat.  Then I added salsa and stirred it around, followed by the egg whites:

It was a little watery, so next time I will add the salsa after the eggs are cooked.

Afternoon Snack

An end slice of whole wheat tuscan pane with light cream cheese

DSC02191Grilled Tinfoil Vegetables

- medium onion

- large squash

- large zucchini

- handful baby carrots

- dash of dill

- 1 Tbsp olive oil

- 1 Tbsp lemon juice

Place a double layer of heavy duty foil on counter.  Fill with chopped vegetables; top with olive oil, lemon juice, and spices.  Close vegetables tightly into long foil package.  Grill for 30 minutes or until desired consistency, then top with Parmesan cheese.

We also grilled corn and burgers (96/4).  Jim put cheese in the middle of his, and I added onions & garlic powder to mine.  The corn was delish and super easy.  All you do is pull back the husks, remove the silk, coat with butter and salt (we used spray butter), replace the husks, and then grill for 10-20 minutes (turn regularly).  While everything was grilling, I enjoyed one of these:

I also had a spoonful of nut butter and a package of Kashi crackers a few hours later, but forgot to snap a picture.  Dinner was unpictured as well…forgive me.   One of my friends from college is a teacher and in town to visit her family for a few days.  She invited me to eat dinner at her dad’s house.  Dinner was a mexican casserole (refried beans in tortillas topped with enchilada sauce and veggies), a side of rice, and Edy’s ice cream for dessert.  It was excellent!  I didn’t get home until 10:00, so I skipped posting and opted for bed instead.

I was planning on doing the P90X shoulders & back DVD, but opted for a run instead.  Being short on time, I kept it to 2.5 miles and then did about 20 minutes of the stretching DVD to cool down.  Lunch had to be quick (and super early…11am!)

Luckily, I was able to shower and make it to my dentist appointment on time.   They took impressions for the bite guard, which should be ready in a few weeks.  Following my appointment, I made the 40 minute drive to the regional airport to meet my dad.   I brought some squash to munch on in the car…

But that didn’t do the trick, so I stopped at a gas station for this:

Dad and I flew for an hour or so, and then headed back to my parent’s house for dinner.  My mom made fresh okra, grilled “tin-foil” vegetables (squash, mushrooms, onions, and zucchini with olive oi & spices wrapped in tin foil on the grill for 30 minutes), and teriyaki steak kabobs:

We walked to my grandparent’s after dinner and hung out with them for a bit.  They had to show me my grandmother’s “second kitchen” (she started a catering busy at age 60….so cute!), which was formerly part of my grandpa’s workshop.  And we also checked out the  enormous garden…the garden alone is bigger than my backyard!  One of the perks of country life.  After a fun day/night of visiting, it was time to go home.  Dad flew me back to the airport and then I drove the remainder.  I had a quick snack, bath, and then settled into bed around 11pm.

After breakfast, I drove to meet my dad at the regional airport. I am so upset – my camera died on the airfield today!  I took a picture of some of the other planes:

It’s my own fault for not checking before I left.  We had a great time though – he even let me fly (or attempt to fly) for a bit.  The hard part was seeing over the dashboard because I’m so short.  Next time I need to bring a big pillow.

We made a pit stop in Gastonia to celebrate his and my grandmother-in-law’s birthday.  Lunch was a spread – roast beef, potato casserole, shrimp etufe, rice, okra, fried squash, salad, and rolls.  I had 3 oz or so of the roast beef, 1/2 cup of potato casserole, 1/4 cup of shrimp, a few pieces of okra, two small slices of fried squash, and salad.  I skipped the rolls and rice to save room for dessert – a Baskin-Robbins ice cream cake!  YUM!

After lunch, we flew for another hour or so and then landed to exchange goodies.  His birthday present for a huge bag of veggies from the garden, homemade pickles, and fresh zucchini bread.  Check out my crisper – totally packed!

I was starting to feel a bit sluggish around 4, so I had a protein bar on the drive home.  It’s Healthwise, the brand we carry at my office – not natural by any means, but it did the job.  I don’t have a picture since I hadn’t made it home to change the camera battery yet.   After putting up my goodies, I set out to do the P90X Yoga – it was 90 minutes and no walk in the park.  I’m still flexible from my former dance/twirling days, but there were some moves I couldn’t master.

Dinner was fairly light due to the large lunch:

After my late breakfast, I went for a jog/walk – 4 miles in 55 minutes (I think I ran 40 and walked 15 or so).   I wish I’d woken up early because it was really hot by 10am (80-90 degrees?).  I wore sunscreen and a hat and still got burned – my skin is just super fair.  I keep touching my cheeks and they’re still hot 8 hours later….oh well, free blush.  I cooled down while reading blogs, and then fixed myself an early lunch since I had to be at my hair appointment by 12:30.

I sat for almost 3 hours this afternoon for my highlights and trim, and then had a handful of almonds in the car on the way to the mall.

My sister-in-law was supposed to meet me, but she never answered her phone.  I perused the sale rack at Anthropologie and tried a few things on, but nothing worked.  I get so frustrated being “well-endowed” and short.  I realize I can have things altered (and nearly every item I buy ends up going to a tailor) but it gets old…and expensive.  I did manage to find a BCBG shirt at Belk for $40 from $138 – gotta love a bargain!

I could get away without altering this one, but it’s sleeveless and an inch off the fabric at the shoulders would make a huge difference.  I’ll probably spend the extra $10 or $15….sigh.  At least I found something fun though!

I worked up an appetite shopping and wanted something quick when I got home.  Decided on a salad with tofu, egg, romaine, carrots, tomatoes, roasted red peppers, and TJ’s reduced fat cilantro dressing.

It turned out a little watery, but even watery this stuff is AWESOME!  Emily is a genious!  I had a Tbsp or so straight off the spoon and also used it to make my breakfast cookie for breakfast tomorrow.  I will be dreaming of it tonight for sure.  Oh, and the peanut butter spurred a chocolate craving, so I had a few Ghirardelli dark chocolate chips:

I had good intentions on Wednesday – went for a 45 minute walk during work and planned on working out when I got home, but I talked myself out of it.   I watched DVR’d episodes of The Cleaner instead – slacker.  This was followed by some mindless munching  – Kashi crackers with peanut butter, cereal, Kashi cookies, sunchips, and a few mini Twix bars.   Technically I should say binge instead of munching…munching sounds so much better though.  Moral of the story – I have to blog every day even if I don’t feel like it.  Also, I am allowed to take a day off from working out, but shouldn’t feel guilty and let that turn into eating unnecessary stuff.

Enough about that…today I will not continue yesterday’s cycle.  Wasn’t feeling that hungry because of all the junk last night, so I decided on a light smoothie:

I ain’t gonna lie – it’s been a rough one…

Today has been one of those days….it’s the first time I’ve had to work a 10+ hour day since I changed my schedule.  Just a bit of history – I used to work four 10-hour days with Thursdays off; now I work 8-9 hours 4 days a week.  I requested the drop in hours because I was becoming too run down.  Counseling for weight loss requires more than nutrition advice; people want to know you genuinely care about them, and because I do care, it’s very easy for me to “pick up” other people’s emotions.  Sounds weird, but if a patient of mine is down or depressed, I sometimes leave the office feeling down and depressed as well.  I realized I needed more “me time” so I could balance work, home life, and my own health goals.  Okay, long explanation there…sorry about that….

…so today was an 11 hour day work day.  We had a meeting this morning at 7:30, and because I like to have time to decompress before work, that means I had to be at the office by 7.  After our staff meeting, I taught two classes today and saw 5 or 6 patients individually between 8:30 and 5:30, with a few 30 minute “catch-up” breaks here and there (time for paperwork and dictations).   I also had a few cancellations which gave me a little more time to get my charts in line for Friday.  This was by no means a difficult day emotion-wise; none of my patients were having major crises or in tears but MAN do I feel wiped!  And boy did I let things get out of hand this afternoon….

Here’s the low-down of my day’s eating:

Our medical director is turning 50 this weekend, so we threw him a surprise party to celebrate.  He didn’t have a break in patients until 1:30, so I had a “pre-lunch” at 11:30:

Salad with a bit of cheese, 1 slice turkey, 1 meatball, and veggies (a co-worker fixed this for me while I was in class and added dressing, but I didn’t use it).  The meatball was delish though!   And dessert:

Okay, so not bad really considering all the other things I could have added (chips, cake, cheese, crackers, ham, more meatballs, you get the picture) BUT two hours later things go downhill quick:

I had more almonds than pictured, probably another serving or two at least…and several handfuls of Kashi crackers.  All because I was trying to avoid the cookies in the break room with “healthier” snacks instead.  Knowing darn well I wasn’t hungry; just tired and craving stuff.

And so after my last patient at 5:30, I said “screw it, I’ve already blown it, might as well eat them” so I proceeded to eat not one, not two, but FIVE chocolate chip cookies AND a slice of cold homemade pizza I had in the fridge for Friday’s lunch.   Darn homemade cookies, why do you call out my name?  So now I’m officially disgusted with myself, but at least I can feel proud about the fact that I fessed up and didn’t avoid blogging.  That’s the whole point of this, right?

So, no dinner tonight since I’ve eaten dinner plus some already.  I’m not going to sit here and beat myself up – tomorrow is a new day and these things happen sometimes; at least that’s what I tell my patients.  This is where I’m supposed to listen to my own advice.  I tossed the rest of the almonds since they are just too darn tempting, and the cookies will be gone by the time I return to work on Friday.  I WILL get back on track as of this second and tomorrow will be better.  :)


Wedding Festivities

Yesterday’s wedding was beautiful, and a lot of fun.  As I’m looking through my pictures, I’m really disappointed I don’t have any of the bride or groom!  I should have tracked them down and made them pose for me…oh well.

Dinner was buffet style – I had 2 chicken skewers (maybe 1.5 oz of chicken total), 2 meatballs, 1/3 cup of artichoke/potato casserole dish, 4 wheat crackers, 3 cubes of colby jack cheese, 1 cup of raw veggies, 1/2 cup of the sweetest strawberries ever (they had to be from a local farmer or something), and 2 pieces of fresh pineapple.  I also had a small piece of the groomsmen cake – it was chocolate with chocolate icing and a layer of hardened chocolate on the outside…superb!  I guess it’s hard to go wrong with so much chocolate involved.  This is Jim (the husband), me, and Donna after our meal.

I drank more than I planned, but luckily I’m not being punished for it today.  Last night’s festivities involved 3 smallish glasses of wine, 2 Miller Lites, and 1 Michelob Ultra.  It’s hard to believe I feel okay right now, especially with wine thrown into the mix.  Surprisingly, I passed on the actual wedding cake and ended the night with 2 cups of coffee instead (I added a bit of creamer and one Splenda packet to each cup).  But….

I was pretty hungry once we got home (alcohol tends to do that…), so I had a bowl of cereal before I passed out went to bed.  At least we didn’t stop for greasy fast food!   I forgot to take off my make-up and woke up with my contacts still in – tell-tale signs that I had too much to drink.

Breakfast today was another bowl of cereal: 1/2 cup Cheerios, 1/2 cup Kashi GOLEAN Crunch Honey Almond Flax, 2/3 cup Peanut Butter Bumpers, and 1 cup of TJ’s Vanilla Soymilk.

Friday Eats

Breakfast was uneventful – I think I was still half asleep as I rushed through this at 6:15.  I had the usual overnight oatmeal base with 1/2 oz almonds and 1/2 cup Kashi GOLEAN Crunch Honey Almond Flax cereal; I had a glass of TJ’s Vanilla Soymilk on the side:

I started to feel a little rumbly around 10, so I had a Live Active 2% cottage cheese:

Lunch was a huge salad and a serving of Kashi crackers around 12:30:

The salad included mixed greens, shredded carrots, canned tomatoes, roasted red peppers, avocado, turkey breast, and TJ’s reduced fat cilantro dressing.  Tasted great at the time, but my stomach felt really odd for the next two hours; rumbly and crampy.  Must be veggie overload or something.  Sorry if that’s TMI…

Anyways, I had an Oikos 0% Greek Blueberry Yogurt around 3:30.  This is the first flavored Oikos I’ve tried and it was excellent!

I left work around 4 and stopped by First Uniform to pick up a new scrub top and bottoms.  I’ve been meaning to buy new ones for awhile, since my current larges are starting to hang off of me.  I thought I would be a medium up top, but I fit in a small on top (at least in this particular brand) so that was exciting – have to celebrate the little things!    I probably could have pulled off the medium petite bottoms but opted for the large petite instead; I hate when scrubs are form-fitting and these were a junior fit to begin with.  Had to laugh at the brand name though – Gray’s Anatomy.

I got home around 5 and had the rest of my TJ’s low calorie bread and a wedge of laughing cow:

After my scrub shopping, Jim and I drove by the local Masoner’s club to pick up a Boston Butt I’d purchased from one of my patients.  Kenan was in the car and whined the entire way home over it.  In fact, he’s staring at Jim as the leftovers are being cut and put away.  I tried a small piece for dinner, but as I suspected, I’m still not a huge fan of pork.  I know two people (well, one person and one dog) who will enjoy it all week though:

I stuck with my salad since it was quick and easy – more mixed greens, carrots, and avocado but I added a hard-boiled egg, reduced fat colby, and dried edamame.  I topped it all with a splash of balsamic vinaigrette.  It was good, but like last night, I still didn’t feel satisfied.  I had a bowl of Peanut Butter Bumpers cereal with Vanilla Soymilk:

Apologize for the duplicate picture (it’s the same as last night’s snack), but I promise it looked pretty much like this.  Even after the cereal I still wanted something else…

…a mini Twix!  I’ve had these in the freeze for “emergencies” for about a week or so.  I should have let it thaw a little more because the caramel was sort of crunchy.   Honestly, I want something else, but I’m cutting myself off – I know I don’t need it.

We have a post-dress rehearsal party to attend tonight, and I don’t want to end up with a 2500+ calorie day.  I’m trying not to count calories because I can easily become obsessed with it, but I couldn’t help it after my cereal and candy – I think I’m at 1900 right now.  Obviously today will be a weight maintenance versus weight loss day after you factor in the alcohol I plan on drinking tonight.

I’ll probably have one to three light beers – wine usually gives me a headache, you never know how much sugar they add to liquor drinks, and I really don’t feel like dealing with a hangover tomorrow.  I could drink quite a bit in my college “glory days” but I swear something happened to my body after I graduated – it does NOT handle alcohol like it used to; more than two and I’m starting to push it.

Alright, well better hop in the shower and get presentable.  I’ll post some pictures of the festivities tomorrow.
