Fish-y Day!

June 19, 2009

Finished 45 minutes on the elliptical, but then my appetite got the best of me – I bailed on strength training.  Jim grilled chicken for himself and salmon for me. It’s been a fish-y day today – tuna for lunch and salmon for dinner, with leftovers to spare (Jim made an extra unpictured fillet)!

I coated the top with a mixture of low sodium soy sauce and teriyaki sauce, then Jim grilled it on a cedar plank for 15-20 minutes.  While he grilled, I sauteed some onions, frozen veggies, and roasted red peppers in olive oil, apple cider vinegar, and garlic powder.  I added a sprinkle of sliced almonds at the end, too.

Whoops….made too many veggies….

I saved the remains for later, so I could have room for dessert:

I really am obsessed with cereal, I think….

Unwarranted Hunger

…and 1/2 cup Peanut Butter Bumpers with 1% milk; both around 8:30 or so

One hour later I’m still looking for something else to munch on because my stomach is growling, but I brushed my teeth to avoid eating more.   I’ve had plenty to eat today; I should NOT be hungry.  I think the hunger is a result of this weekend’s overindulgence in alcohol and three nights of less than stellar sleep.  Everything comes tumbling down if I don’t get a solid 8 hours.  Oh well, I’m not going to over analyze too much; it’s easier to just go to bed at this point.  Let’s hope for a good night’s sleep tonight!  Nighty nite!

Yogurt and Cereal Mess

June 16, 2009

Breakfast was a yummy mess:

Before it was a mess:

The entire bowl:

DSC01858

– 1/2 cup plain nonfat yogurt

– 1/2 cup plain nonfat Greek yogurt

– 2/3 cup Kashi Mighty Bites

– 1/2 cup Kashi GOLEAN Crunch Honey Almond Flax

– 1/2 oz almonds

– small banana

– drizzle of agave nectar

This hit the spot!  Now I’m all fueled for the long work day ahead! 🙂

Kashi and Pizza – Variety???

June 15, 2009

I slept poorly last night – reset my alarm and skipped the AM strength session.  I’ve been running on empty since 1 (I bet I’m still feeling the effects of Saturday night), but I avoided the temptation of coffee.  That cup at 3 yesterday didn’t help my insomnia – lesson learned.

Breakfast was the usual overnight oatmeal base (1/3 cup oats, 1/2 cup unsweetened almond breeze, and 1 Tbsp ground flaxseed) with toppings around 7:30am.   Today I added 1/2 oz almonds and 3/4 cup Kashi Go Lean – not quite as tasty as Go Lean Crunch, but it packs a nice protein punch.

DSC01843

I also had a glass of 1% milk on the side:

DSC01846

I opted for a Kashi Honey Almond Flax chewy bar as a morning snack at 10am:

DSC01847

I went for a 30 minute walk with Renee and Arielle (surgical dietitian and fitness trainer at my office) around noon.  It was a bit warm, but still felt nice to get out of the office for a bit.

Lunch was a slice of homemade pizza from last night, fresh zucchini & mushrooms with pizza sauce for dipping, and a cheese stick:

DSC01849

The pizza wasn’t quite as good microwaved versus straight from the oven last night, but I still enjoyed every bite!

Afternoon Snack – I had another Kashi bar at 3:30:

DSC01848

…and some carrots around 5:30 for the drive home:

DSC01851

I rested on the couch for about 5 minutes before I could muster the energy to throw together something for dinner.  Cooking was not on my agenda, so I settled for another slice of homemade pizza and fresh zucchini with Trader Joe’s hummus…

DSC01854

Yes, I took a bite of pizza before I snapped the picture:

Followed by a slice of Tusan Pane bread and ~ 1 Tbsp Skippy Natural Peanut Butter for dessert:

Hmmm…looking back at today’s choices, I’m realizing there isn’t a whole lot of variety.  Kashi and pizza seem to be the theme here.  Oh well, I’m content so that’s all that matters, right?

Post-Dress Rehearsal Party and Saturday Breakfast

June 13, 2009

Last night’s post-dress rehearsal party was fun (besides the part about it not starting until after my usual bedtime …makes me feel old). The party was close to my mother-in-law’s house, so we dropped Kenan off to play with his “sister-in-law”, Kyler.  Kyler is an adorable shitzu who thinks she’s as big as Kenan.

It was an outdoor event, so it was a bit humid; otherwise, I have no complaints.  We chatted with some friends from college, and I met a few more of Jim’s friends from high school.  I also met the bride-to-be (Alice Ann) for the first time; she was super sweet and I’m glad she’ll be living close to Charlotte after the wedding. Just to confuse everyone, the groom-to-be is also named Jim – he’s a friend of my Jim’s from high school/college.  We forgave him for going to NC State since he came back to UNC for dental school.  😉

Donna (my husband’s best friend’s girlfriend turned my good friend as well), Alice Ann, and me

I had three Miller Lites over the span of 3 hours, and my hand might have found a handful or two of peanuts and chex mix.  I also had 1/2 of a homemade chocolate chip cookie when we picked up Kenan.  But, no post-drinking munchies once we got home at 1 am.  🙂

I didn’t get up until 10 today…no hangover, thank goodness.  I had a variety bowl of cereal in TJ’s Vanilla Soymilk: 2/3 cup cheeries, 1/2 cup Kashi GOLEAN Crunch Honey Almond Flax, 1/3 cup Peanut Butter Bumpers, and 1/2 oz almonds:

DSC01788

Have I mentioned I love cereal?

This should be my last blurry picture – my camera does have a macro setting; I just didn’t know it existed until Kath mentioned it.  My husband will agree that I’m technologically challenged and usually has to show me this sort of thing…but I figured this one out myself (with the help of Kath’s prompting and the online camera manual….shhhh!)

Alright, time to be productive since we have to leave the house by 4 for the wedding tonight.  I want to get in a good workout on the elliptical and do some strength training; maybe I’ll take care of the weekly grocery store run too if I have time.

Friday Eats

June 12, 2009

Breakfast was uneventful – I think I was still half asleep as I rushed through this at 6:15.  I had the usual overnight oatmeal base with 1/2 oz almonds and 1/2 cup Kashi GOLEAN Crunch Honey Almond Flax cereal; I had a glass of TJ’s Vanilla Soymilk on the side:

DSC01771

I started to feel a little rumbly around 10, so I had a Live Active 2% cottage cheese:

DSC01774

And then the rest of my carrots about 30 minutes later…

DSC01775

Lunch was a huge salad and a serving of Kashi crackers around 12:30:

DSC01777

The salad included mixed greens, shredded carrots, canned tomatoes, roasted red peppers, avocado, turkey breast, and TJ’s reduced fat cilantro dressing.  Tasted great at the time, but my stomach felt really odd for the next two hours; rumbly and crampy.  Must be veggie overload or something.  Sorry if that’s TMI…

Anyways, I had an Oikos 0% Greek Blueberry Yogurt around 3:30.  This is the first flavored Oikos I’ve tried and it was excellent!

DSC01779

I left work around 4 and stopped by First Uniform to pick up a new scrub top and bottoms.  I’ve been meaning to buy new ones for awhile, since my current larges are starting to hang off of me.  I thought I would be a medium up top, but I fit in a small on top (at least in this particular brand) so that was exciting – have to celebrate the little things!    I probably could have pulled off the medium petite bottoms but opted for the large petite instead; I hate when scrubs are form-fitting and these were a junior fit to begin with.  Had to laugh at the brand name though – Gray’s Anatomy.

I got home around 5 and had the rest of my TJ’s low calorie bread and a wedge of laughing cow:

DSC01780

After my scrub shopping, Jim and I drove by the local Masoner’s club to pick up a Boston Butt I’d purchased from one of my patients.  Kenan was in the car and whined the entire way home over it.  In fact, he’s staring at Jim as the leftovers are being cut and put away.  I tried a small piece for dinner, but as I suspected, I’m still not a huge fan of pork.  I know two people (well, one person and one dog) who will enjoy it all week though:

DSC01783DSC01782

I stuck with my salad since it was quick and easy – more mixed greens, carrots, and avocado but I added a hard-boiled egg, reduced fat colby, and dried edamame.  I topped it all with a splash of balsamic vinaigrette.  It was good, but like last night, I still didn’t feel satisfied.  I had a bowl of Peanut Butter Bumpers cereal with Vanilla Soymilk:

DSC01766

Apologize for the duplicate picture (it’s the same as last night’s snack), but I promise it looked pretty much like this.  Even after the cereal I still wanted something else…

DSC01786

…a mini Twix!  I’ve had these in the freeze for “emergencies” for about a week or so.  I should have let it thaw a little more because the caramel was sort of crunchy.   Honestly, I want something else, but I’m cutting myself off – I know I don’t need it.

We have a post-dress rehearsal party to attend tonight, and I don’t want to end up with a 2500+ calorie day.  I’m trying not to count calories because I can easily become obsessed with it, but I couldn’t help it after my cereal and candy – I think I’m at 1900 right now.  Obviously today will be a weight maintenance versus weight loss day after you factor in the alcohol I plan on drinking tonight.

I’ll probably have one to three light beers – wine usually gives me a headache, you never know how much sugar they add to liquor drinks, and I really don’t feel like dealing with a hangover tomorrow.  I could drink quite a bit in my college “glory days” but I swear something happened to my body after I graduated – it does NOT handle alcohol like it used to; more than two and I’m starting to push it.

Alright, well better hop in the shower and get presentable.  I’ll post some pictures of the festivities tomorrow.
