Cashew Heaven

I am so proud of myself for waking up at 5:30 am to do the P90X Pyelometrics DVD!  This girl does not set her alarm any earlier than 6am…period….except for today.  I felt great for the majority of today, but I’m feeling really drained at the moment.  Probably the combo of less sleep and a semi-slow day at work.  Apparently people don’t like to weigh-in the day after July 4th weekend…surprise, surprise.

Anyways, on to the food:

I had 1/2 slice of whole wheat tuscan pane (unpictured) preworkout, followed by the other half with cashew butter and a green monster post-workout:

Maybe I should call this a brown monster instead of a green monster?  In the blender – 1/2 cup frozen strawberries, 1/2 frozen peach, 8 oz skim milk, 1 scoop unflavored whey protein, 2 handfuls spinach, and a PureVia packet.  I liked the PureVia yesterday, but it was a little too sweet with an aftertaste today.  I think I’ll be returning to my agave nectar from now on.

Breakfast lasted me until 10:45, and then I reached for my usual:

I was craving sweets this afternoon, so I opted for a “chocolate peanut dream” flavored protein bar from the office at 3pm:

Not as good as real chocolate and peanut butter, but a decent substitute.  I actually ate a second one at 5pm because I was feeling hungry and knew dinner would be at least another 2 1/2 hours or more.  I’m meeting Renee (another RD at my office) and one of her friends to celebrate her birthday at Zen Asian Fusion tonight.  I have no clue what I’m going to order since I haven’t been there before.  Oh, and I had some grated zucchini just now because I’m still hungry!  Grrrr for late dinners; guess it’s the price of good company. 😉

Sampling Sunday

The husband didn’t feel like P90X today, so I decided to run instead.  I managed 3.5 miles at a slow pace; not bad for post-alcohol.  Post-run I made lunch:

Cereal (what else?) – 1 cup Kashi Go Lean, 1/2 cup Trader Joe’s O’s, 1 cup 1% kefir, and 1/2 oz almonds…

….and some fresh pineapple.  I planned on this being my entire lunch, but I was still hungry 30 minutes later.

I decided a Banana Smoothie would hit the spot.  It contained 1 scoop Unjury unflavored protein powder, 4 oz unsweetened Almond Breeze, frozen medium banana, and 1/2 packet of PureVia (leftover free samples).  It tasted like ice cream with the added stevia! 🙂

Obviously (if  you read my earlier post), my afternoon was spent baking zucchini bread/muffins.  I had 1/2 of the following muffin and might have licked a spoonful of batter.

I let these cook for too long, so the bottoms burnt…boo.  I couldn’t resist trying one, so I took this one with the ooey-gooey Ghirardelli:

Burnt bottoms aside, it was delish!

The cookies used the last of my oats, so I made a trip to Healthy Home Market for some bulk bin goodies – wheatberries, oat bran, rolled oats, and cashews.  I wanted to try my hand at some homemade cashew butter:

I thought my poor processor was going to overheat, but it’s still alive.  I sampled a Tbsp to make sure it was edible – and oooh buddy, it’s edible alright!  Can’t wait to use this stuff over the next week!  After all my “samplings” this afternoon, I decided my 30 minute run wasn’t going to cut it.  I hopped on the elliptical for 45 minutes and then showered.  By 7, I still wasn’t hungry but didn’t want delay dinner much longer.  I settled on another banana smoothie (unpictured, since it’s the exact same as earlier) and a plate of leftover grilled tinfoil veggies with Parmesan cheese:

Busy day and my first Green Monster!

For being slightly hungover this morning, I’m shocked at how productive today turned out to be.  Jim asked me to accompany him to the mall to pick out a present for his grandmother’s birthday, so being the good wife that I am, I happily obliged.  Shopping is a sure-fire way to forget a hangover.  I had a cheese stick in the car since we left at noon and I wasn’t hungry enough for lunch yet.

After browsing for a bit, we settled on Kiehl’s bath stuff.  I might have purchased a body wash for myself as well – gardenia…smells awesome.  After the mall, I had an easy lunch:

After lunch and a reading session with SELF magazine, I tidied up around the house and did some laundry.  A hour or so later I was hungry, so I had about 1/2 cup lowfat plain yogurt with 1/4 cup or so of Kashi GOLEAN Crunch:

Refueled and ready to go!  Jim was gone golfing with Chris, so I set out on a shopping mission at Run for Your Life.  I received some gift certificates for my birthday two months ago but was waiting to use them once my bra size changed again.   Sports bras for the “well-endowed” are not cheap, my friends!  I found one bra for running, one for lower impact stuff, and two sleeveless tanks.  I’m excited about the tanks because now I won’t have tanlines from my T-shirts!

After my shopping spree, I set out to gather the weekly groceries at Target and Trader Joe’s.  I might have thrown another sleeveless tank in the cart at Target as well…must have been the shopping demons taking over my hands (or at least that’s my excuse).  It was 7 by the time I made it home but I wasn’t that hungry and wanted to try out my new workout gear.   I had a piece of rye with ~1 Tbsp pbu to get me through the workout:

I took Kenan on a short run through our neighborhood – about a mile or so, and then did the P90X Shoulders & Arms DVD (~1 hr).  I loved this one – I actually enjoy free weights quite a bit.   They just make you feel strong and empowered!   After shoulders & arms I completed the Ab Ribber workout (~15 min) – it definitely rips your abs apart!  I am going to be so sore tomorrow!!!

I wasn’t really hungry after all the workouts, but knew I needed something substantial for dinner.  So…I tried my first Green Monster!!!

In the blender:

– 1/2 cup 1% Keifer

– 1/2 cup lowfat plain yogurt

– 1 scoop unflavored whey protein

– 2 big handfuls baby spinach

– 1 frozen peach

– 1/3 cup frozen strawberries

It turned out almost brown, but it was delish!   I was able to get away without adding agave nectar since the dairy was lowfat instead of fat free.   I also had another piece of rye with pbu on the side, but I didn’t take a picture since it would just be a repeat of earlier.

Fatigue is finally starting to set in after my jam-packed day, so I believe I will be heading to bed shortly.  I’ll try and post before seeing my dad in the morning, but if not, expect some flying pictures tomorrow night!

I had good intentions on Wednesday – went for a 45 minute walk during work and planned on working out when I got home, but I talked myself out of it.   I watched DVR’d episodes of The Cleaner instead – slacker.  This was followed by some mindless munching  – Kashi crackers with peanut butter, cereal, Kashi cookies, sunchips, and a few mini Twix bars.   Technically I should say binge instead of munching…munching sounds so much better though.  Moral of the story – I have to blog every day even if I don’t feel like it.  Also, I am allowed to take a day off from working out, but shouldn’t feel guilty and let that turn into eating unnecessary stuff.

Enough about that…today I will not continue yesterday’s cycle.  Wasn’t feeling that hungry because of all the junk last night, so I decided on a light smoothie:

– 1 scoop unflavored whey protein

– 1 tsp agave nectar

Very refreshing!

Now I’m ready to take on the day.  Today’s agenda includes working out, a haircut/highlight, hanging out with my sister-in-law, and whatever else I feel like accomplishing.  Glad to be back! 🙂

Atypical dinner – smoothie and cereal

Do you ever wake up in total confusion, struggling to remember what day it is?  Today was one of those mornings, and I was sorely disappointed when I realized it was Tuesday instead of Thursday (my day off).  I got over it pretty quick though and moved on to breakfast by 6:30:

Overnight oatmeal (1/4 cup nonfat plain yogurt, 1/4 cup almond breeze, 1/3 cup oats) topped with 1/2 oz almonds, 1/4 cup Kashi GOLEAN, and a drizzle of agave nectar AND some protein:

1/2 cup egg substitute and 1/2 oz low fat mozzarella

I had a cup of coffee at work around 7:30 with a splash of 1% milk (unpictured) to get me going.  Unfortunately, I felt the caffeine crash a few hours later, but gotta love that buzz while it lasts!

I snacked on a cheese stick at 10:00 and decided to have an early lunch at 11:45:

LEFTOVERS!

– 4 oz extra lean ground beef with 1 packet ketchup I “stole” from the break room

– 1/2 cup couscous with pat of Earth Balance margarine

– a pile of green beans with balsamic vinegar

Nothing spectacular, but it did the job and I knew it needed to be eaten before it went bad.  Waste not, want not…or something like that.

One of my patients canceled, so I went for a 30 minute walk around 1pm.  Nothing like fresh air to perk you up, even if it is 90 degree air!

By 4 I was started to feel a little headach-y and hunger was starting to grow, so I had a piece of rye bread with almond butter and agave nectar.  I left work around 4:30 and then had some carrots when I walked in the door.  I debated running, but didn’t really feel up to it; Kenan and I settled for a walk in the park instead.  There were tons of geese and ducks out today!  He loved it – watching his excitement makes me beam like a proud parent…I can’t imagine what being a REAL parent will feel like if a dog brings out this much emotion in me.  Not that I’m planning on becoming a parent anytime soon…just sayin’.

I didn’t feel up to a hot dinner tonight for 3 reasons:

#1 – It’s hot outside!

#2 – Jim is out of town for work so I don’t feel compelled to cook.

#3 – I already had a hot meal at lunch.

Irregardless of the reason, I decided to make a big smoothie and a bowl of cereal:

DSC01992Pineapple-Strawberry Dream Smoothie

– handful frozen pineapple &- handful frozen strawberries

– 1 to 2 Tbsp lemon juice

– water to preferred consistency (I think I used 6 oz???)

– 1 scoop unflavored whey protein

– few drops vanilla extract

– small chunk of brown sugar (?1 tsp)

BLEND AND ENJOY!

I was trying to recreate the sorbet consistency of the glaze I made Sunday night, but it didn’t turn out as thick.  I think I should have used less water and a food processor.  It was still really good though; a perfect summer “treat”!

My cereal bowl contained about 1 cup total – it was a mixture of Kashi Mighty Bites, Kashi GOLEAN, and the last of my Peanut Butter Bumpers (!!!) in skim milk.  I’m going to have to buy another box this weekend for sure.

This may not be typical dinner fare, but I was very pleased and am feeling quite content at the moment.  Now I just have to figure out what to do with the rest of my night.  🙂



Cheesy Tofu/Egg Panini with Green Beans

It is HOTTTT today – went for a jog/walk around 11am and I think it was at least 90 degrees!  I was gone for about an hour and covered a little over 4 miles – I alternated jogging and walking and made sure to stop at every water fountain along the way.  My route is blessed with three, thank goodness!  Forgot to wear sunscreen, so my face has natural blush now…I’ve got to get better about that!

I had a later lunch around 1:30, and tried something new after being inspired by the tofu/egg sandwich on Trying for a Tri‘s blog today.  Here’s my version:

Cheesy Tofu/Egg Panini

– 1/4 block extra firm tofu

– drizzle low sodium soy sauce

– 1 egg

– 1 slice Whole Wheat Tuscan Pane bread

– smear of Earth Balance margarine

– sprinkle of light mozzarella cheese

Saute tofu with soy sauce on medium heat (this is 1/2 block – I cooked extra for later).  While tofu is cooking, fry egg in separate pan using nonstick cooking spray.  Cut bread in half and spread margarine.

Assemble panini and place on heated panini-maker

I received this as a wedding gift, but this is the first time I’ve used it in at least a year.  Glad I remembered I had it!

The cheese was perfectly melty and I liked the combo of egg and tofu.  Now that I’ve remembered my panini maker, expect to see a few more sandwiches.   I also had a side of sauteed green beans with olive oil & balsamic vinegar.

After lunch, I messed around online for a bit and then showered!  Yeah for clean hair and shaved legs…haha.  I’m going to run a few errands, but had a quick smoothie to keep my energy up and beat the heat:

It’s a lower calorie version of my peanut butter banana smoothie recipe.  I used 70 g frozen banana, 1/2 cup unsweetened almond breeze, 10 g peanut butter, and 1/4 scoop protein powder.    Perfect for this hot day!


I ain’t gonna lie – it’s been a rough one…

Today has been one of those days….it’s the first time I’ve had to work a 10+ hour day since I changed my schedule.  Just a bit of history – I used to work four 10-hour days with Thursdays off; now I work 8-9 hours 4 days a week.  I requested the drop in hours because I was becoming too run down.  Counseling for weight loss requires more than nutrition advice; people want to know you genuinely care about them, and because I do care, it’s very easy for me to “pick up” other people’s emotions.  Sounds weird, but if a patient of mine is down or depressed, I sometimes leave the office feeling down and depressed as well.  I realized I needed more “me time” so I could balance work, home life, and my own health goals.  Okay, long explanation there…sorry about that….

…so today was an 11 hour day work day.  We had a meeting this morning at 7:30, and because I like to have time to decompress before work, that means I had to be at the office by 7.  After our staff meeting, I taught two classes today and saw 5 or 6 patients individually between 8:30 and 5:30, with a few 30 minute “catch-up” breaks here and there (time for paperwork and dictations).   I also had a few cancellations which gave me a little more time to get my charts in line for Friday.  This was by no means a difficult day emotion-wise; none of my patients were having major crises or in tears but MAN do I feel wiped!  And boy did I let things get out of hand this afternoon….

Here’s the low-down of my day’s eating:

Our medical director is turning 50 this weekend, so we threw him a surprise party to celebrate.  He didn’t have a break in patients until 1:30, so I had a “pre-lunch” at 11:30:

Salad with a bit of cheese, 1 slice turkey, 1 meatball, and veggies (a co-worker fixed this for me while I was in class and added dressing, but I didn’t use it).  The meatball was delish though!   And dessert:

Okay, so not bad really considering all the other things I could have added (chips, cake, cheese, crackers, ham, more meatballs, you get the picture) BUT two hours later things go downhill quick:

I had more almonds than pictured, probably another serving or two at least…and several handfuls of Kashi crackers.  All because I was trying to avoid the cookies in the break room with “healthier” snacks instead.  Knowing darn well I wasn’t hungry; just tired and craving stuff.

And so after my last patient at 5:30, I said “screw it, I’ve already blown it, might as well eat them” so I proceeded to eat not one, not two, but FIVE chocolate chip cookies AND a slice of cold homemade pizza I had in the fridge for Friday’s lunch.   Darn homemade cookies, why do you call out my name?  So now I’m officially disgusted with myself, but at least I can feel proud about the fact that I fessed up and didn’t avoid blogging.  That’s the whole point of this, right?

So, no dinner tonight since I’ve eaten dinner plus some already.  I’m not going to sit here and beat myself up – tomorrow is a new day and these things happen sometimes; at least that’s what I tell my patients.  This is where I’m supposed to listen to my own advice.  I tossed the rest of the almonds since they are just too darn tempting, and the cookies will be gone by the time I return to work on Friday.  I WILL get back on track as of this second and tomorrow will be better.  🙂
